My home country of Singapore is in Southeast Asia – and I have travelled to many countries and sampled the wonderful dishes. Food from these countries are among my favourite, if the spiciness is toned down to a reasonable level.
From my experience, food in many areas of South & Southeast Asia is a rowdy, people-filled occasion – usually hours spent in the kitchen preparing with dishes covering the table and countless people talking at one go.
I fear this people-food aspect may get loss with the fast-paced, interconnected lifestyle taking over. I hope that this cookbook can keep this culture alive – as I strongly believe it is crucial to making change and reshaping the mindset of food, eating and sustainability.
